Instructions
  1. Preheat your griddle over a low flame.
  2. Beat the egg whites with protein powder until smooth and fluffy.
  3. Mix in the cherries (reserve a few for topping, if desired).
  4. Wait until the griddle is hot enough (when drops of water sizzle up).
  5. Pour some batter on the griddle. Flip after a couple of minutes.
  6. Cook for another couple of minutes on the other side.
  7. Repeat steps 5 and 6 until you’ve finished your batter.
  8. Mix whey and water to make the vanilla icing.
  9. Stack pancakes, and top with icing (and any remaining cherries).
  10. Enjoy!
Notes
A note about substitutions: because each type of protein powder has a distinct flavor and texture when baked, I would not try substituting whey in the pancake or vegan proteins in the icing. Casein would work of the icing, although you may need more water. (See my Recipe Basics video for examples of what goes wrong when you use the wrong protein powder.)
