Double Chocolate Chip Protein Cookies

Makes 8 cookies.
Ingredients
- ¼ cup almond butter (60g) (or any nut butter)
- ¼ cup filtered water (60ml)
- a pinch of sea salt
- ⅓ cup chocolate pea protein powder (33g)
- 2 tablespoons stevia-sweetened chocolate chips (21g)
Instructions
- Preheat oven to 325F (163C).
- Mix almond butter, water, and salt until combined.
- Add pea protein, and combine into a dough. You may need to use your hands.
- Fold in chocolate chips.
- Break into 8 pieces, and roll each into a ball. Press and flatten each onto a parchment-lined cookie sheet.
- Bake for about 12 minutes, or until firm.
- Let cool, and enjoy!
Notes
A note about substitutions: Rice protein powder can be used instead of pea protein powder. I would not recommend whey protein in this recipe.
