Tiramisu Protein Crepes

Makes 2 crepes.
Crepe batter:
Chocolate drizzle:
Sprinkle with more confectioners style erythritol
  1. Rub a little coconut oil on your griddle or spray with non-stick cooking spray.
  2. Preheat griddle over low-medium flame.
  3. Mix crepe batter ingredients with electric mixer or whisk.
  4. Once your griddle is hot enough (drops of water sizzle up), pour half the crepe batter onto griddle. Spread into a thin circle (6-7" diameter).
  5. When the edges begin to curl up, flip the crepe. Let cook for another minute or so.
  6. Repeat steps 4 and 5 for the second crepe, then turn off flame.
  7. Mix filling ingredients (except for the cacao powder, although you can mix that in if you prefer!) and spread along the center of each crepe.
  8. Dust with cacao powder, and fold the crepes.
  9. Sprinkle with more confectioners erythritol, if desired. Set aside.
  10. Mix chocolate drizzle ingredients, and drizzle over crepes.
  11. Enjoy!
A note about substitutions: Quest's powder is a whey/casein blend. If you want to try using a whey powder, add about 1 tablespoon oat flour or ½ tablespoon coconut flour to the crepe batter. Also note that Quest vanilla protein powder is sweetened with sucralose, an artificial sweetener (if that is important to you). The Multi-Purpose Mix used here is all-natural.

I don't usually count the carbs of no-calorie sweeteners, but if you count the erythritol carbs here it would add about 3 grams to the carbs (per crepe), but not change the calories.
