lemon protein pancakes

I suppose this post is less of a recipe and more of an idea. Take your favorite protein cake batter, and use it to make protein pancakes. Easy!

I made these with our Lemon Protein Cake Mix. The mix only calls for applesauce and water to prepare, so these protein pancakes couldn’t be easier!

In the photo we’ve topped them with Lemon Sugar-Free Whipped Cream, which is made from our Lemon Sugar-Free Frosting Mix and heavy cream. You can find the Sugar-Free Whipped Cream details here.

Makes approx. six 3" pancakes (2 servings).
Ingredients
Instructions
  1. Prepare the cake batter as directed on the package.
  2. Spray griddle with non-stick cooking spray.
  3. Preheat griddle on low heat.
  4. Pour batter as 4-6 pancakes.
  5. Flip when bubbles rise to the surface of the pancakes.
  6. Cook another minute or two until firm.
  7. Enjoy!
Notes
I've left out the calorie-free carbs from erythritol in the cake mix. The total carb count would be 20g if including them.
