The following recipes use a variety of different protein powder options. The first recipe uses a rice protein powder, which I love for protein cookies. For other recipes and for shakes, it is a bit too grainy. The next uses a pea blend which is great for baking (recipes come fluffy with pea protein), and is a good choice for vegan protein shakes. The third recipe uses powdered peanut butter, which is great for baking. It bakes up nice and fluffy, and has better flavor than the rice or pea proteins. It also generally has more carbs, so that’s the trade-off. The sandwich cookies are made with a whey/casein blend, which bakes very well in general. Casein can be hard to digest for some, so I would get a few samples before buying a big tub the first time. And the final recipe has just 3 ingredients – one of them being our (whey-based) Protein Cookie Mix. We did most of the work for you, and you just need to add peanut butter or dairy butter and water.
1. Peanut Butter Protein Cookies
One of my very first protein cookie recipes, and still one of my favorites. These peanut butter protein cookies are made with rice protein powder and are vegan, and they can even be made raw vegan by using a dehydrator instead of baking. Easy and delicious!
2. Chocolate Dipped Peanut Butter Protein Cookies
With or without the sugar-free chocolate topping, these peanut butter protein cookies are another great, quick choice. These are made with a pea protein blend and are also vegan (as is the chocolate topping).
4. Peanut Butter & Jelly Protein Cookie Sandwiches
A fun twist on the classic PB&J sandwich, these peanut butter protein cookies are made to look like the real thing! They use a whey/casein protein powder blend.
5. Peanut Butter Protein Cookie Mix
Our whey-based protein cookie mix makes it easier than ever to whip up some peanut butter protein cookies, and there’s no added sugar! All you need to add is peanut butter (or dairy butter) and water. The cookie photo above is the mix prepared with crunchy peanut butter, and the photo on the package is the mix prepared with dairy butter.
