Once again I’ve been inspired by Amy of Fragrant Vanilla Cake. Her flavor combinations are delicious! And after seeing a recent post of hers, I had to try creating these Sweet Potato Protein Tartes with Lime and Pomegranate!

I realize this flavor combo might not appeal to everyone. But if you think you may enjoy it, I urge you to give it a try! It is beyond delicious!

Sweet Potato Protein Tartes with Lime and Pomegranate

Makes two 4" tarts (4 servings)
Ingredients
Crust:
Filling:
  • 1 cup cooked sweet potato (150g)
  • ⅓ cup unflavored whey protein powder (31g)
  • 2 tablespoons lime juice (30ml)
  • 2 teaspoons lime zest (10ml)
  • a pinch of sea salt
  • 2 tablespoons pomegranate seeds (22g)
Topping:
  • 2 tablespoons pomegranate seeds (22g)
Instructions
  1. Preheat oven to 325F (163C).
  2. Mix almond butter with water until smooth.
  3. Add rice protein, cinnamon, and salt. Mix until combined.
  4. Press into two 4" tarte pans.
  5. Bake for 10 minutes, then remove from oven.
  6. Meanwhile, except for the pomegranate seeds, combine the filling ingredients in a food processor.
  7. Transfer to a bowl, and fold in pomegranate seeds.
  8. Remove cooled crusts from their pans.
  9. Fill crusts.
  10. Top with remaining pomegranate seeds.
  11. Enjoy!
Notes
A note about substitutions: because each type of protein powder has a distinct flavor and texture, I would not try substituting different types of protein powders in this recipe. (See my Recipe Basics video for examples of what goes wrong when you use the wrong protein powder.)
