Chocolate Peanut Butter Protein Bars

Makes two servings (4 small bars).
Serves: 2
  1. Put 2 tablespoons of peanut flour in each of two small bowls.
  2. Add one packet of protein to each bowl.
  3. Add cacao powder to the chocolate bowl.
  4. Add 1 tablespoon of date sugar to each bowl. Mix well.
  5. Add 2 tablespoons of filtered water to each bowl, and mix well.
  6. Fold cacao nibs into the vanilla bowl.
  7. Line a mini loaf pan with parchment paper.
  8. Press the chocolate layer into the pan. Top with vanilla layer.
  9. Freeze for about an hour to set.
  10. Cut and enjoy! Store in the freezer (or in the refrigerator if you will eat it soon).
A note about substitutions: If you wish to use an all-whey powder, you might need to add additional peanut flour or coconut flour. Casein might be a better replacement.
