Peaches and Cream Hazelnut Protein Pie

Makes one 9" pie (8 servings).

Ingredients
Crust:
  • ⅓ cup hazelnut butter (75g)
  • ⅓ cup filtered water (79ml)
  • ½ cup vanilla rice protein powder (56g)
  • ¼ teaspoon ground cinnamon (1.5ml)
Filling:
Instructions
  1. Preheat oven to 325F (163C).
  2. In a medium bowl, mix hazelnut butter with water until smooth.
  3. Add in rice protein and cinnamon. Mix until combined.
  4. Press into pie pan.
  5. Bake for 10-12 minutes, and let cool slightly.
  6. Meanwhile, begin to make the filling by puréeing 2 cups of peaches with the vanilla whey protein. Add water if necessary, but we want to keep the mixture thick. Pour into a bowl.
  7. Stir in chia seeds and remaining peaches.
  8. Fill pie crust, and let set in refrigerator for a few hours or overnight.
  9. Slice, and enjoy!
Notes
A note about substitutions: You might try pea protein (or a pea blend like Warrior Blend) in place of the rice protein, and casein in place of the whey, but I wouldn't try other substitutions. Plant proteins and whey bake up very differently.
Also, hazelnut butter can be made by processing hazelnuts or hazelnut meal in a food processor.
