Cashew Whipped Cream

Makes about 1 cup.
  • 1 cup raw cashews, soaked in filtered water for 4 hours or more
  • ⅓ cup filtered water
  • 1 tablespoon raw agave nectar
  1. Drain and rinse cashews.
  2. Blend cashews with ⅓ cup water and agave for 30 seconds.
  3. Scrape down the sides of the blender with a spatula, and blend again for 30 seconds. Repeat twice more, or until smooth and creamy.
  4. Refrigerate, or freeze for two hours to firm up for piping.
Maple syrup can be used to replace the agave nectar.
