Red Velvet Protein Whoopie Pies

Makes one whoopie pie.
Serves: 1 whoopie pie
  1. Preheat oven to 325F (163C).
  2. Mix cookie ingredients until well combined.
  3. Spoon onto parchment-lined cookie sheet as two cookies. Use the back of your spoon to help shape the cookies.
  4. Bake for 8 minutes and check to see if they are firm. If not, check every minute, and remove from oven as soon as the cookies are firm.
  5. Let cookies cool.
  6. Mix filling ingredients until well combined.
  7. Turn one cookie over and spoon filling on top. Cover with remaining cookie.
  8. Enjoy!
A note about substitutions: because each type of protein powder has a distinct flavor and texture when baked, I would not try substituting different types of protein powders in this recipe. (See my Recipe Basics video for examples of what goes wrong when you use the wrong protein powder.)
Also, Neufchâtel cheese is marketed as "1/3 less fat than cream cheese" here in the states. I stay away from the fat-free cream cheeses because of the additives.
