Double Chocolate Protein Fudge

Makes 16 fudge squares (4 servings).
Serves: 4
  1. Line two small loaf pans with parchment paper.
  2. Mix protein powder with cacao.
  3. Add water (start with 3 tablespoons), and mix.
  4. Add almond butter and salt. Mix well.
  5. If the fudge is too thick to spoon into a pan, add another tablespoon of water. Mix well.
  6. Spoon fudge into parchment-lined pans.
  7. Freeze for 1-2 hours, until the parchment peels cleanly from the fudge.
  8. Cut into squares, and enjoy!
  9. Store in the front of the freezer. (If they get too frozen, leave at room temperature for a couple of minutes before eating.)
A note about substitutions: You can substitute casein powder for the whey powder. For a vegan version, you could use Vega Sport Chocolate. Other vegan powders are chalkier, and wouldn't work well. Cocoa powder can be used in place of cacao powder. And almond butter can be made by processing almonds in a food processor.
