Coconut Frozen Protein Yogurt

Makes 3 servings.
  1. Mix coconut yogurt, whey protein, coconut milk, and stevia until smooth.
  2. Stir in shredded coconut.
  3. Cover the bowl and freeze for about 4 hours. Every half hour or so, take the bowl from the freezer and mix the ice cream. (Other options are to use an ice cream maker, or use the ice and salt method.)
  4. Enjoy!
A note about substitutions: you could substitute Greek yogurt for the coconut yogurt, but it will have less coconut flavor (and very different macros!). You could also substitute casein protein for the whey. For a paleo version, replace the stevia with your preferred paleo sweetener.
