Lemon Poppy Protein Bites

Makes 6 pieces (3 servings), or 2-3 protein bars.
  1. Mix all of the ingredients. Start with 2 tablespoons lemon juice, and add by the teaspoon as necessary to get it to mix as a dough. Use your hands to get it all fully combined.
  2. Break the dough into 6 pieces, and roll into balls.
  3. Enjoy! Store leftovers in an air-tight container in the refrigerator. Wrap in parchment and a ziplock bag to carry with you.
A note about substitutions: If you want to try these with all whey, I would drop the coconut oil to 1 tablespoon. You still might need extra coconut flour to get a dough consistency (add by the teaspoon). With all casein, I would start with 1 tablespoon coconut flour, and add by the teaspoon if you need more. Unflavored vegan powders would probably have too much plant flavor for this recipe.
