Apple Peanut Protein Muffins

Makes 3 muffins.
  • 4 large egg whites (132g)
  • 4oz unsweetened applesauce (111g)
  • 1 cup Jamie Eason Peanut Protein powder or powdered peanut butter (112g)
  • 1 teaspoon baking powder (5ml)
  • ¼ teaspoon ground cinnamon (1.2ml)
  • ¼ cup chopped apple (31g)
  • 2 tablespoons peanut halves (18g)
  1. Preheat oven to 325F (163C).
  2. Mix egg whites and applesauce until combined.
  3. Add protein powder, baking powder, and cinnamon. Mix well.
  4. Fold in chopped apple and peanuts.
  5. Spoon batter into 3 large silicone muffin cups.
  6. Bake for 24 minutes, or until firm and a toothpick comes out clean.
  7. Let cool, and enjoy! Store extras in the refrigerator.
A note about substitutions: because each type of protein powder has a distinct flavor and texture when baked, I would not recommend using whey protein or other vegan powders here. You might try using powdered peanut butter or peanut flour in place of the protein powder, but you'd probably want to add a sweetener.
