Superfood Protein Cookies

Makes 6 cookies.
  1. Preheat oven to 325F (163C).
  2. Line a cookie sheet with parchment paper.
  3. Mix almond butter, water, and agave.
  4. Add protein powder. Mix well, and use your hands to fully combine the dough.
  5. Fold in goji berries, and break dough into 6 pieces.
  6. Roll each piece into a ball, and place on cookie sheet. Flatten each with the back of a spoon or the heel of your hand. (Or place flattened cookies on mesh dehydrator sheet.)
  7. Sprinkle with hemp hearts.
  8. Bake for 12-14 minutes, or until firm. (Or dehydrate for about 12 hours, shifting the cookies halfway through.)
  9. Enjoy!
A note about substitutions: These wouldn't be superfood cookies without the Superfood Protein Medley, but the recipe would work with rice or pea protein powders. I would not recommend other types of protein powders for this recipe. (See my Recipe Basics video for examples of what goes wrong when you use the wrong protein powder.)
