Double Chocolate Protein Snack Cake

Makes 8 pieces (in a loaf pan).
  1. Preheat oven to 325F (163C).
  2. Mix all ingredients well.
  3. Pour into silicone (or parchment-lined) loaf pan.
  4. Bake for 25 minutes and check to see if it is firm and a toothpick comes out clean. If not, check every minute or two. Do not overbake!
  5. Let cool, and enjoy! Store in the refrigerator.
A note about substitutions: other flours can be substituted for the coconut flour, but you'd need up to 2x more, since coconut flour is very drying. I would not recommend substituting other types of protein powder for the whey here.
