Chocolate Chip Protein Pillow Cookies

Makes 8 cookies.
  1. Preheat oven to 325F (163C).
  2. Mix vanilla whey and applesauce until smooth.
  3. Add almond meal and baking powder. Mix well.
  4. Fold in chocolate chips.
  5. Spoon onto a parchment-lined baking sheet.
  6. Bake for 8-10 minutes.
  7. Let cool slightly, and enjoy! Store any extras in the refrigerator.
A vanilla whey concentrate is recommended for this recipe. Some whey isolates may turn out well (like Jamie Eason's whey isolate), but other types of protein powders are not recommended. See my Recipe Basics video for what happens whey you use the wrong type of protein powder.
