Caramel Apple Protein Pie

Makes one 9" pie.
Serves: 6
Apple filling:
  • 5 cups apples (625g)
  • ½ teaspoon ground cinnamon (2.5ml)
Caramel sauce:
  1. Preheat oven to 325F (163C).
  2. In a medium bowl, mix almond butter with water until smooth.
  3. Add in rice protein and cinnamon. Mix until combined. (If the batter is sticky, add a little more rice protein.)
  4. Press into pie pan.
  5. Bake for 10-12 minutes, then remove from oven.
  6. Meanwhile, peel apples and slice thinly.
  7. Steam apples, and let cool slightly.
  8. Sprinkle apples with ground cinnamon.
  9. To make caramel sauce, mix all ingredients, starting with only ¼ cup water. Add water by the tablespoon until it mixes well, but is still thick. (It will take on more moisture from the apples.)
  10. Spoon a thin layer of caramel sauce into the crust. Then layer the apples. Add more caramel sauce, and more apples. Continue with remaining caramel and apples.
  11. Let pie sit at room temperature for about an hour to set.
  12. Enjoy!
  13. Store in the refrigerator.
A note about substitutions: you can replace the rice protein with pea protein, and the whey with casein, but I wouldn't try other substitutions. See my Recipe Basics video for what happens when you use the wrong protein powder.
Almond butter can be made by processing almonds in a food processor.
