  1. Prepare Double Chocolate Protein Cookie Mix as directed on package, and add the peppermint flavoring to the cashew butter and water before adding the mix.
  2. Once cookies are cool, mix confectioner's erythritol and water and drizzle or pipe onto cookies.
  3. Enjoy! Cookies can be stored at room temperature for a few days. Refrigerate for longer storage.
If you add the carbs from the erythritol topping, it adds 10g carbs per serving (but does not change the calorie count).
