Chocolate Covered Mini Protein Donuts
Makes 12 mini donuts.
Cake donut:
Chocolate coating:
  1. Preheat oven to 325F (163C).
  2. Prepare Protein Cake Mix as instructed on package (by adding applesauce and water, and mixing well).
  3. Pour batter into a piping bag or ziplock bag.
  4. Pipe into silicone mini-donut pan. (See this video for more info on piping from a ziplock bag.)
  5. Bake for 12 minutes or just until cooked through. Be careful not to overbake, as overbaked protein cake will be dry.
  6. Let donuts cool in the pan.
  7. Meanwhile, melt chocolate and coconut oil.
  8. Add sweeteners, and mix well.
  9. Line a cookie sheet with parchment paper.
  10. Once cool, remove donuts from pan and set on parchment.
  11. Using a dipping fork (or a regular fork), dip each donut into the chocolate coating. Let the excess chocolate drip off before placing the donut on the parchment.
  12. Once all are dipped, place sheet in the refrigerator to set.
  13. If you have any extra chocolate, wait until the first layer is set, then dip again.
  14. Let set for 20-30 minutes in the refrigerator, and enjoy!
Without our Protein Cake Mix, you might try using this recipe for Glazed Protein Donuts, but be sure to use a protein that bakes well (like the protein we use there).
Instead of sweetening unsweetened chocolate, you might try using Lily's stevia-sweetened chips or your favorite dark chocolate.
