Lemon Protein Pancakes
Makes approx. six 3" pancakes (2 servings).
  1. Prepare the cake batter as directed on the package.
  2. Spray griddle with non-stick cooking spray.
  3. Preheat griddle on low heat.
  4. Pour batter as 4-6 pancakes.
  5. Flip when bubbles rise to the surface of the pancakes.
  6. Cook another minute or two until firm.
  7. Enjoy!
I've left out the calorie-free carbs from erythritol in the cake mix. The total carb count would be 20g if including them.
