Realizing how many different kinds of protein powders I have in my kitchen (over 30!), I’m trying to make use of them. I used vanilla rice protein powder in these, but a pea protein would also work well. Pea protein bakes up fluffier, but rice has a bit of a nicer taste. Either way, though, these Fresh Raspberry Protein Muffins make a great, filling breakfast!
