I have been on a coffee kick for a while now, and I love to start my day with coffee and protein cookies. These Mocha Latte Protein Cookies are the perfect breakfast treat!

I used the Vitamin Shoppe‘s Nutriforce Café Cream all-natural whey protein powder, and added cacao powder to get the mocha flavor. You could also use your favorite chocolate whey powder, and add some instant coffee (maybe 1/4 teaspoon?).

Since these Mocha Latte Protein Cookies are whey-based, they bake up very quickly. So they are also great for those “I need cookies now!” moments! :) Give them a try!

Makes 6 cookies (2 servings).

  1. Preheat oven to 325F (163C).
  2. Mix all ingredients well.
  3. Spoon onto a parchment-lined cookie sheet.
  4. Bake for 4 minutes, and check to see if the cookies are firm. If not, check every 1-2 minutes and remove from oven as soon as they are firm. Do not overbake!
  5. Enjoy! Store in the refrigerator.
Notes
A note about substitutions: because each type of protein powder has a distinct flavor and texture when baked, I would not try substituting different types of protein powders in this recipe. (See my Recipe Basics video for examples of what goes wrong when you use the wrong protein powder.) To get the mocha flavor, you can also use chocolate whey and (instead of cacao powder) about ¼ teaspoon instant coffee.
