Apple Peanut Protein Muffins

Powdered peanut butter gives these apple peanut protein muffins great texture and flavor with 21g protein per muffin! Naturally gluten free. Makes 3 muffins.

Ingredients

Instructions

  • Preheat oven to 325F (163C).
  • Mix egg whites and applesauce until combined.
  • Add protein powder, baking powder, and cinnamon. Mix well.
  • Fold in chopped apple and peanuts.
  • Spoon batter into 3 large silicone muffin cups.
  • Bake for 24 minutes, or until firm and a toothpick comes out clean.
  • Let cool, and enjoy! Store extras in the refrigerator.

Notes

A note about substitutions: because each type of protein powder has a distinct flavor and texture when baked, I would not recommend using whey protein or other vegan powders here. You might try using peanut flour in place of the powdered peanut butter, but you'd probably want to add a sweetener.
