Apple Peanut Protein Muffins
Powdered peanut butter gives these apple peanut protein muffins great texture and flavor with 21g protein per muffin! Naturally gluten free. Makes 3 muffins.

Preheat oven to 325F (163C).
Mix egg whites and applesauce until combined.
Add protein powder, baking powder, and cinnamon. Mix well.
Fold in chopped apple and peanuts.
Bake for 24 minutes, or until firm and a toothpick comes out clean.
Let cool, and enjoy! Store extras in the refrigerator.
A note about substitutions: because each type of protein powder has a distinct flavor and texture when baked, I would not recommend using whey protein or other vegan powders here. You might try using peanut flour in place of the powdered peanut butter, but you'd probably want to add a sweetener.
