Thai Peanut Protein Cake

Makes one 8" round cake (8 servings).

Ingredients

  • 4 large egg whites 132g
  • ½ cup unsweetened applesauce 111g
  • 1 tablespoon chopped Thai basil 15ml
  • 1 small Thai chili pepper chopped (I used the skin only, no seeds)
  • 1 cup powdered peanut butter 112g
  • 2 teaspoons baking powder 10ml
  • 2 tablespoons peanut halves 18g

Instructions

  • Preheat oven to 325F (163C).
  • Mix egg whites and applesauce until combined.
  • Add Thai basil and chili. Mix well.
  • Add powdered peanut butter and baking powder. Mix well.
  • Fold in peanuts.
  • Bake in an 8" round (or similarly sized) silicone pan for about 16 minutes, or until firm and a toothpick comes out clean. If not using silicone, line pan with parchment paper.
  • Enjoy! Store in the refrigerator.

Notes

A note about substitutions: because each type of protein powder has a distinct flavor and texture when baked, I would not try substituting different types of protein powders in this recipe. (See my Recipe Basics video for examples of what goes wrong when you use the wrong protein powder.) If you substitute powdered peanut butter like PB2 for the peanut protein, you should add some sweetener.
