Strawberry Protein Cookies

Only 4 ingredients to make these delicious very strawberry protein cookies, and you can whip them up in just 15 minutes!

  • Preheat oven to 325F (163C).
  • Mash strawberries with a fork or pulse in food processor a few times.
    1 cup strawberries
  • Add protein powder, coconut flour, and baking powder. Mix well.
    ½ cup Strawberry Nutriwhey protein powder, 2 tablespoons coconut flour, ½ teaspoon baking powder
  • Spoon onto parchment-lined cookie sheet as 6 cookies.
  • Bake about 10 minutes, or just until firm. Don't overbake!
  • Remove from oven and slide the parchment and cookies to a wire cooling rack. Let cool and enjoy!

Notes

Substitutions:
This recipe works well with whey concentrate. I wouldn't recommend using whey isolate, as the results will likely be dry and rubbery. I also wouldn't recommend using plant protein powders, as they bake very differently from whey.
If you want to use a whey/casein blend like Quest protein powder, you'll likely need more strawberries or other liquid (milk, water) since the casein is more drying than whey.
If you'd like to use a different flour, you'll likely need more than we're using of coconut flour since coconut flour is very drying.
Variations:
The best thing about this recipe is that you can switch up the flavor to be anything you like! Use a different flavor of whey concentrate, and/or use a different mashed fruit. Easy!
