Avocado and vanilla bean give this Vanilla Avocado Pudding delicious flavor and texture, and whey powder gives it a boost of protein! Makes about 1 ¼ cups (3 servings).
Cut the avocado in half, remove the pit, and scoop out the flesh.
In a food processor, process the avocado and water.
Add coconut butter. Process until smooth.
Add whey protein and vanilla seeds. Process until smooth.

Notes
A note about substitutions: A whey/casein blend would also work well here. I haven't found a vegan vanilla protein powder that I would recommend for this recipe.
