Banana Protein Cookies (3 Ingredients!)

  • Line a baking sheet with parchment paper and preheat the oven to 325F.
  • Mash the banana with a fork. 
    1 medium banana
  • Add protein powder and baking powder, and mix well. It will look dry, but keep mixing. 
    ½ cup vanilla whey/casein blend, ½ teaspoon baking powder
  • Spoon the batter onto the parchment lined baking sheet into 8 cookies.
  • Bake for 12 minutes or until cooked through.
  • Let cool, and enjoy!

Notes

Ingredient Substitutions
This recipe only works with a whey/casein blend protein powder. Other types of protein powder, such as whey protein and vegan protein powder, absorb liquid differently and do not provide the same structure.
Storage Information
Store these healthy cookies in an airtight container in the refrigerator for 3-5 days. I don't think they would freeze well ( I think they would dry out quickly).
