These delicious banana protein cookies are a great way to satisfy your sweet tooth while adding a boost of protein to your day. These three ingredient cookies use simple ingredients to create a soft, naturally sweet treat that works well for breakfast, meal prep, or an afternoon snack.

With no added sugar and a high protein content (6 g protein per cookie, 48 g protein per batch), these cookies fit into many healthy eating plans, including weight-loss programs.

Ingredients
Banana, 1 medium (120g)
One medium banana provides natural sweetness and moisture to these banana protein cookies. Overripe bananas work best because they mash easily and have a stronger flavor.
Whey/Casein Blend Protein Powder, ½ cup (60g)
A whey/casein blend protein powder is essential for this recipe. The combination gives these protein banana cookies structure without the need for additional ingredients. Vanilla protein powder or unflavored whey protein powder both work well.
I do not recommend other protein powders for this recipe. We have a great recipe for protein cookies using banana and whey protein, and lots of great vegan protein cookies.
Baking Powder, ½ teaspoon
Baking powder helps these three ingredient protein cookies rise slightly and creates a lighter texture. Without it, the cookies would be too dense.
Equipment Needed
Parchment Paper
Parchment paper keeps the cookies from sticking to the baking sheet. Protein batters tend to stick more than traditional batters, so this is important.
Baking Sheet
I love this cookie sheet by Airbake not only for the air feature, but because the parchment will slide right off so your cookies don't overbake.
Oven Thermometer
I highly recommend using an oven thermometer for best results. You'd be surprised how often ovens are off-temperature. Not having the correct baking temperature can lead to underbaked or dry, dense cookies.
Kitchen Scale
A kitchen scale ensures accuracy, especially when measuring the size of your bananas and the grams of protein in your protein powder.
Medium Bowl
A medium sized mixing bowl provides enough space to mash bananas and mix the ingredients properly. I like this mixing bowl set because of the non-slip bottom and easy-to-clean interior.
Fork and Spoon
To mash the banana and spoon the cookie batter.
Instructions
1. Line a baking sheet with parchment paper and preheat the oven to 325F.
2. Peel the banana and place it in the bowl. Mash the banana with a fork.
3. Add protein powder and baking powder to the mashed bananas. and mix well. It will look dry, but keep mixing.
4. Spoon the batter onto the parchment-lined baking sheet forming 8 cookies.
5. Bake for 12 minutes or until cooked through.
6. Transfer the banana protein cookies to a cooling rack (while still on the parchment paper).
7. Let cool, and enjoy!
Ingredient Substitutions
This recipe only works with a whey/casein blend protein powder. Other types of protein powder, such as whey protein and vegan protein powder, absorb liquid differently and do not provide the same structure. Here is a recipe for banana whey protein cookies and banana peanut butter whey protein cookies.
Recipe Variations
Chocolate Protein Powder: Swap vanilla protein powder for chocolate protein powder for chocolatey deliciousness.
Chocolate Chip Protein Cookies: Mix in sugar free dark chocolate chips to switch things up.
Spice it up: Add a pinch of cinnamon for some delicious warmth.I love this Vietnamese cinnamon for its bold flavor.
Vanilla boost: Add ½ teaspoon vanilla extract. I love this baking vanilla not only for the vanilla flavor, but because it is low alcohol and reasonably priced.
Go coconutty! Add a tablespoon or two or shredded unsweetened coconut and a teaspoon or two of coconut sugar.
Make it sweet: For a sweeter cookie, I recommend adding a granulated or powdered sweetener (like erythritol, stevia, or monk fruit).
Storage Information
Store these healthy cookies in an airtight container in the refrigerator for 3-5 days. I don't think they would freeze well ( I think they would dry out quickly).
