    Banana Protein Cookies (3 Ingredients!)

    These delicious banana protein cookies have only 3 ingredients and are very easy to make. Each cookie has 6g protein, with 48g in the whole batch.

    Ingredients

    • 1 medium banana, ripe or overripe (120g)
    • ½ cup whey/casein blend (60g)
    • ½ teaspoon baking powder
    canister of Quest vanilla protein, Argo baking powder, and a banana.

    Equipment Needed

    • parchment paper
    • baking sheet
    • oven thermometer - highly recommended for best results
    • kitchen scale - highly recommended for best results
    • medium bowl
    • fork and spoon

    How to make banana protein cookies

    1. Line a baking sheet with parchment paper and preheat the oven to 325F.

    2. Peel the banana and place it in the bowl. Mash the banana with a fork.

    3. Add protein powder and baking powder to the mashed bananas. and mix well. It will look dry, but keep mixing.

    4. Spoon the batter onto the parchment-lined baking sheet forming 8 cookies.

    5. Bake for 12 minutes or until cooked through.

    6. Transfer the banana protein cookies to a cooling rack (while still on the parchment paper).

    7. Let cool, and enjoy!

    Ingredient Substitutions

    This recipe only works with a whey/casein blend protein powder. Other types of protein powder, such as whey protein and vegan protein powder, absorb liquid differently and do not provide the same structure. Here is a recipe for banana whey protein cookies and banana peanut butter whey protein cookies.

    Recipe Variations

    Chocolate Protein Powder: Swap vanilla protein powder for chocolate protein powder for chocolatey deliciousness.

    Chocolate Chip Protein Cookies: Mix in sugar free dark chocolate chips to switch things up.

    Spice it up: Add a pinch of cinnamon for some delicious warmth.I love this Vietnamese cinnamon for its bold flavor.

    Vanilla boost: Add ½ teaspoon vanilla extract. I love this baking vanilla not only for the vanilla flavor, but because it is low alcohol and reasonably priced.

    Go coconutty! Add a tablespoon or two or shredded unsweetened coconut and a teaspoon or two of coconut sugar.

    Make it sweet: For a sweeter cookie, I recommend adding a granulated or powdered sweetener (like erythritol, stevia, or monk fruit).

    Storage Information

    Store these healthy cookies in an airtight container in the refrigerator for 3-5 days. I don't think they would freeze well ( I think they would dry out quickly).

    FAQ

    Can I use a different type of protein powder?

    No, this recipe requires a whey/casein blend protein powder. Vegan protein powder, whey, or collagen will not produce the same texture.

    What can I do if the mixture seems too dry?

    Keep mixing the ingredients. The moisture from the mashed bananas eventually combines with the protein powder to form a smooth batter.

    Do I need to grease the baking sheet?

    No, using parchment paper prevents sticking without the need for non-stick cooking spray or coconut oil.
