Pumpkin Cheesecake Mousse with Protein

This high protein pumpkin cheesecake mousse is a low carb indulgent protein treat to satisfy your pumpkin spice cravings. And there's no baking required!

Ingredients

  • Best if ingredients are at room temperature.

Pumpkin Mousse:

Crumbled crust and garnish (optional):

Instructions

  • Mix Neufchâtel cheese and Greek yogurt until smooth.
    8 oz Neufchâtel cheese, ½ cup nonfat Greek yogurt
  • Add remaining mousse ingredients, and mix until smooth. Set aside.
    ½ cup pumpkin puree (canned), ½ teaspoon alcohol-free vanilla extract, ⅓ cup vanilla whey protein isolate, 1 mini scoop monk fruit powder, 1 teaspoon pumpkin pie spice
  • If adding cookie crumble, crush cookies and sprinkle into each serving cup, leaving some for garnish.
    1 serving low carb cinnamon cookies
  • Pipe or spoon the cheesecake mousse into cups.
  • Top each with more cookie crumble (if using), and enjoy!

Whey/casein blends should also work well (like Quest protein powder or PEScience Select).
I wouldn't suggest plant-based protein in this recipe, as the plant flavor would likely come through (and be unpleasant in a cheesecake recipe).
Sweet potato (cooked and mashed) would make a great sub for the pumpkin!
