Vanilla Cashew Protein Cookies

These cashew butter protein cookies are a melt-in-your-mouth treat! Vegan protein cookie recipe made with plant protein and nut butter.

  • Preheat oven to 325F (163C).
  • Mix cashew butter and almond milk until smooth.
    ¼ cup cashew butter, 3 tablespoons unsweetened almond milk
  • Add salt and vanilla seeds. Mix well.
    a pinch of sea salt, seeds of a vanilla bean
  • Add protein powder, and mix into dough. Use your hands to combine, if necessary.
    ¼ cup vanilla plant-based protein blend
  • Fold the cashews into the cookie dough.
    2 tablespoons cashews
  • Roll the cookie dough between two sheets of parchment paper, and use a cookie cutter to make cookies. Or, roll the dough into balls, and flatten them to make cookies.
  • Place cookies on a parchment-lined cookie sheet.
  • Bake for 10-12 minutes, or until firm.
  • Enjoy!

Notes

These healthy protein cookies are made with plant-based protein powder, which gives the melt-in-your-mouth texture. I don't recommend using a different type of protein powder in this recipe because the taste and texture would be very different..
