EASY Chocolate Protein Cookies (Healthy, Gluten Free)

Instructions

  • Preheat oven to 325F (163C).
  • Mix all ingredients until well combined.
    ½ cup chocolate whey protein concentrate, 2 tablespoons coconut flour, ½ medium banana, ½ teaspoon vanilla extract, 1 tablespoon water, ½ teaspoon baking powder
  • Spoon batter onto a parchment-lined sheet as 6 cookies.
  • Bake for about 8 minutes, and check to see if they are firm. If not, check every minute. Be sure not to over-bake these cookies! Take them out as soon as they are firm.
  • Let cool, and enjoy! Store in the refrigerator.

Notes

Substitutions:
Whey protein powder: This recipe is designed for whey protein concentrate, and I don't recommend using other types of protein powder in this recipe. If you'd like to use plant-based protein powder, try these yummy chewy chocolate protein cookies and these delicious no-bake hemp protein cookies.
If you'd like to use a whey/casein blend, try this recipe for double chocolate protein cookies.
Coconut flour: This recipe won't turn out with other types of flour. If you'd like to make protein cookies with whey and almond flour, see this recipe for chocolate chip protein cookies.
Banana: Any mashed fruit would work here. If you use something runnier than mashed banana (like mashed strawberries, as in this strawberry protein cookie recipe), lessen the amount of water you add to this recipe.
Vanilla extract: Other flavor extracts would be great here, like almond extract or peppermint extract. BUT be sure to just start with a few drops of these other flavors, as the extracts are usually very strong.
Baking powder: If you omit the baking powder, the cookies will be a bit more dense.
Storage:
The cookies will stay well in an airtight container in the refrigerator for several days.
