Collagen Protein Brownies (Gluten Free)

These collagen protein brownies taste like traditional fudge brownies(!!) and they have a protein boost from a combo of collagen and egg whites. These delicious collagen brownies are sure to be your new favorite brownies!

Ingredients

  • 1 cup (104 g) collagen peptides
  • ¾ cup (144 g) coconut sugar or granulated calorie-free sweetener
  • ½ cup (40 g) alkalized cocoa
  • 6 tablespoons (46 g) gluten free flour or all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ¼ cup (57 g) butter or almond butter
  • 4 large (132 g) egg whites
  • ¼ cup (60 g) coffee, brewed and cooled or almond milk or water
  • 2 teaspoons vanilla extract - I love this baking vanilla
  • ¼ cup (60 g) sugar free chocolate chips (optional, delicious with or without!)

I use this marine collagen, but any kind of collagen will work.

I like the flavor of alkalized cocoa, so I've used that here. You can use natural cocoa powder instead, and in that case switch from baking powder to baking soda.

I've also made these with granulated erythritol (instead of coconut sugar), and they came out great!

How to make collagen protein brownies

1. Preheat the oven to 350F (175C) and line the pan with parchment paper.

2. Melt the butter (start with 20 seconds in the microwave).

3. Mix the dry ingredients and set aside.

4. Mix the wet ingredients.

5. Add the wet ingredients into the dry ingredients.

6. Fold in the chocolate chips.

7. Pour the brownie batter into the parchment-lined pan.

8. Bake for 18-20 minutes, until the edges are set and the center is almost set.

9. Remove from oven and let cool on a wire rack.

10. Once cool, remove from the pan, cut, and enjoy!

Recipe Variations

Go nuts! Add ¼ cup of your favorite nuts, chopped, for an added level of flavor and texture. I love pecans, so that would be my recommendation here.

Brown butter makes everything better! Instead of just melting the butter, brown the butter for a richer, nuttier butter flavor.

FAQ

Can I sub whey protein for the collagen?

No, this recipe only works for collagen protein (collagen peptides). I have a separate brownie recipe for whey protein brownies.

Why did you choose marine collagen? Is there any fish flavor or odor?

I don't eat meat, but I do eat fish. So it felt right to choose marine collagen. And there is absolutely no flavor or odor - of any kind - in this brand of marine collagen.

Can you make this recipe vegan?

No, collagen is not a vegan product.

  • Add the wet ingredients to the dry ingredients, and mix well.
  • Fold in the chocolate chips (if using).
    ¼ cup (60 g) sugar free chocolate chips
  • Pour batter into parchment-lined pan.
  • Bake for 18-20 minutes, until the edges are set and the center is almost set.
  • Remove from oven and let cool on cooling rack.
  • Once cool, cut and enjoy! (Tip: They are easiest to cut after being refrigerated.)

Notes

Store these in an airtight container in the refrigerator.
This recipe was created for collagen protein (collagen peptides), and I do not recommend using other types of protein in this recipe.
