Mint Chip Protein Mousse

This creamy and delicious Mint Chip Protein Mousse is made from avocado and vanilla whey with a hint of peppermint extract. A totally indulgent protein treat!

Mint Chip Protein Mousse

I'm using raw cacao nibs here in place of chocolate chips (as I often do) to avoid the sugar while keeping the crunchy texture and chocolate taste. With a little stevia, the mousse is sweet enough to balance the unsweetened cacao.

The key to making avocado mousse is making sure you have a ripe avocado. When you do, whatever added flavors you use (the mint and vanilla, here) overtake the avocado taste. All you taste here is a delicious minty mousse!

Ingredients

  • 1 ripe avocado about 1 cup, 150g
  • ¼ cup filtered water 59ml
  • 1 packet stevia 1g
  • ¼ teaspoon alcohol-free peppermint extract 1.2ml
  • ½ cup natural vanilla whey protein powder 45g
  • 1 tablespoon raw cacao nibs 7g

Instructions
 

  • In a food processor or small blender, combine the avocado and water until smooth.
  • Add stevia, peppermint flavor, and whey protein. Process until smooth.
  • Spoon into a bowl, and fold in the cacao nibs.
  • Enjoy!
  • Store in the refrigerator.

Notes

A note about substitutions: You could substitute casein for the whey protein in this recipe. Vegan proteins wouldn't be as creamy, but you might try a pea protein blend like Warrior Blend or Vega Sport. For a paleo version, replace the stevia with your preferred paleo sweetener.

    I LOVED this, though I adapted a bit: used maple syrup (can't deal very well with stevia) and added just a scoop of protein powder.
