This creamy and delicious Mint Chip Protein Mousse is made from avocado and vanilla whey with a hint of peppermint extract. A totally indulgent protein treat!
I’m using raw cacao nibs here in place of chocolate chips (as I often do) to avoid the sugar while keeping the crunchy texture and chocolate taste. With a little stevia, the mousse is sweet enough to balance the unsweetened cacao.
The key to making avocado mousse is making sure you have a ripe avocado. When you do, whatever added flavors you use (the mint and vanilla, here) overtake the avocado taste. All you taste here is a delicious minty mousse!

- In a food processor or small blender, combine the avocado and water until smooth.
- Add stevia, peppermint flavor, and whey protein. Process until smooth.
