Chocolate Chip Protein Pillow Cookies

These delicious cookies puff up like little pillows in the oven! As they cool, they take the shape of traditional chocolate chip cookies. They are Chocolate Chip Protein Pillow Cookies!

The recipe has only five ingredients and is very easy to prepare. Because this is a simple recipe with few ingredients, it is important to keep that in mind and choose the right type of protein powder, and that is whey protein concentrate. I wouldn't recommend vegan protein powders, whey isolate, or casein for this recipe.

Chocolate Chip Protein Pillow Cookies

Soft, cake-like chocolate chip protein cookies made with whey protein. Easy protein breakfast or snack!

Ingredients

  • 1 cup (102 g) natural vanilla whey protein powder
  • ½ cup (111 g) unsweetened applesauce
  • ¼ cup (28 g) almond flour
  • 1 teaspoon (4 g) baking powder
  • 2 tablespoons (21 g) stevia-sweetened chocolate chips

Instructions
 

  • Preheat oven to 325F (163C).
  • Mix vanilla whey and applesauce until smooth.
    1 cup (102 g) natural vanilla whey protein powder, ½ cup (111 g) unsweetened applesauce
  • Add almond flour and baking powder. Mix well.
    ¼ cup (28 g) almond flour, 1 teaspoon (4 g) baking powder
  • Fold in chocolate chips.
    2 tablespoons (21 g) stevia-sweetened chocolate chips
  • Spoon onto a parchment-lined baking sheet.
  • Bake for 8-10 minutes.
  • Let cool slightly, and enjoy! Store any extras in the refrigerator.

Notes

A vanilla whey concentrate is recommended for this recipe. Other types of protein powders are not recommended. See my Recipe Basics video for what happens whey you use the wrong type of protein powder.

    Different types and brands of protein powder bake very differently, so I wouldn't expect everyone's to look exactly the same. Feel free to reach out by email and I'd be happy to help troubleshoot! (I hope they tasted good, at least!)

    Hi Nikki. I wouldn't recommend Greek yogurt in place of applesauce. I think the texture would be off (dry) and the result wouldn't be sweet enough. Hope this helps!
