Coconut Protein Cookies

These easy coconut protein cookies make a great on-the-go protein snack or breakfast cookie. Made with protein powder and coconut flour, they are naturally gluten free.

Pro Tip

Be sure not to over-bake these cookies. Over-baking whey protein can cause the cookies to be dry and rubbery, so it is important to take the cookies out of the oven as soon as they are firm.

The recipe is simple, and the cookies have great flavor and texture. Give these coconut protein cookies a try!

Coconut Protein Cookies

Great protein snack! These easy coconut protein cookies are packed with coconut AND protein. Delicious on-the-go protein snack!

Ingredients

  • 2 tablespoons (32 g) coconut butter not oil
  • 2 tablespoons filtered water
  • ⅓ cup (32 g) vanilla whey concentrate
  • 1 tablespoon (7 g) coconut flour
  • 2 packets (2 g) stevia
  • 2 tablespoons (15 g) shredded unsweetened coconut

Instructions
 

  • Preheat the oven to 325F (163C).
  • Mix coconut butter and water.
    2 tablespoons (32 g) coconut butter, 2 tablespoons filtered water
  • Add in whey, coconut flour, and stevia. Mix well.
    ⅓ cup (32 g) vanilla whey concentrate, 1 tablespoon (7 g) coconut flour, 2 packets (2 g) stevia
  • Stir in shredded coconut.
    2 tablespoons (15 g) shredded unsweetened coconut
  • Form into 6 dough balls, and place on parchment-lined cookie sheet.
  • Flatten each cookie (with your hand or the back of a large spoon).
  • Bake for 4 minutes, and check to see if they are firm. If not, check every minute and remove from oven when firm.
  • Enjoy!

Notes

Be sure to use coconut butter, not coconut oil. And I don't recommend using other types of protein powder in this recipe.
