This protein carrot cake recipe is an easy crowd pleaser! I’ve been baking up a storm lately, and have been sharing my creations with a few covid bubble friends. They aren’t necessarily into healthy baking, and they absolutely loved this cake! And I want to thank Joy on the Healthy Habits team for recommending raisins. I wouldn’t have chosen that myself, but I loved having them here!

The cake is made with Proteinfull Baking’s new Classic Yellow Cake Mix. I worked with them to develop the recipe, and it is by far the best protein cake I’ve ever had. The mix of almond, whey, and flax proteins provides incredible texture and flavor.

I added spices, grated carrots, pecans, and raisins to transform the yellow cake into this delicious, flavorful protein carrot cake. I also added eggs, oil (or applesauce) and water.
