All the taste of delicious apple pie in a protein bar! These Apple Pie Protein Bars are super-easy to make and a great way to enjoy the flavors of fall.
If you'd like to use an unsweetened apple butter here instead of applesauce, just keep in mind that apple butter is more concentrated and will therefore have more carbs.
The icing is made from confectioners erythritol, a natural calorie-free version of powdered sugar.

Apple Pie Protein Bars
These easy whey protein bars are delicious as apple pie! 22g of protein in these easy to make gluten free apple pie protein bars.
Ingredients
Protein bar:
- ½ cup natural applesauce 112g
- 2 tablespoons almond butter 30g
- 1 teaspoon ground cinnamon
- ⅛ teaspoon ground allspice
- ⅛ teaspoon ground nutmeg
- 1 ¼ cup vanilla whey protein concentrate 113g
- ½ cup coconut flour 56g
Icing:
- 2 tablespoons confectioners erythritol 30g
- 1 ½ teaspoons filtered water
Instructions
- Mix applesauce and almond butter until smooth.
- Add spices and mix well.
- Add protein and coconut flour. Mix as much as you can with a fork or spoon, and then use your hands to fully combine the dough.
- Place on a sheet of parchment paper and form into a rectangle.
- Wrap the parchment around the dough and refrigerate for a couple of hours until firm.
- Cut into 4 bars.
- Mix icing ingredients, and pipe or drizzle over bars.
- Enjoy! Store extras in the refrigerator.
Notes
Erythritol is a calorie-free natural sweetener, and is not included in the carb count here. Including the carbs adds 7.5g per bar but does not change the calories.
If you'd like to substitute the whey with pea protein or casein, you'll need to add some liquid.

Hi Jeannie,
It's definitely worth trying with whey isolate. I think you'll have better results with a creamy whey isolate than with a clean isolate (like Isopure). Also note that you may need more or less coconut flour (or applesauce), as the protein may absorb moisture differently than whey concentrate. I'd love to know how it turns out for you!

I find whey isolate has a more subtle flavor than concentrate which has a distinct “protein powder” flavor to me. I like concentrate for baking but would isolate be ok in this recipe?

Unfortunately almond and coconut flours work very differently in recipes and don't make great substitutes. Hopefully you can get your hands on some coconut flour for this recipe!
