Vegan Protein Recipes
While I often use plant-based protein powders in baking, you'll notice that recipes here (fully vegan) are mostly cookies. That's because to get the rise of a cake with pea protein blends, I really do find that egg whites are needed. I haven't experimented much with egg replacers in protein baking, but feel free to try it for yourself. Start with these plant-based protein cakes, if you do: Protein Cupcakes (sub vegan yogurt here), and Apple Peanut Protein Muffins.
As for the vegan cookie recipes here, I definitely can't choose a favorite! I just love the combination of nut butters with vegan protein powders for a melt-in-your-mouth cookie. In my experience, most popular plant protein powders are pea protein blends, and they should all bake the same in these recipes. And feel free to use a pea protein blend in place of rice protein for these, as well. Happy vegan baking!
